repacking the drive shaft

I own a 1984 supra rider and believe that I need to repack the drive shaft. Is this a difficult process to do? I know I have to buy the right size packing for the particular shaft. Does anyone have any instruction on the best way to do this project.

Here is a good write up on shaft alignment. Might as well align while you are installing new packing :)
