I don't how far you are from Knoxville, but it was 7 hours for me and worth the drive. I can't say the experience went without its share of issues, but the finished product speaks for itself. Both Donnie and Viper are in the Knoxville area and either would do a fantastic job for you.
As for your original question - Florida shops - I can't help you there, but I'm sure there would have to be a lot of shops in Florida that are capable.
