I have been slowly plugging away at my interior pieces. You will find out removing skins, ripping the seams, and making patterns are the most time consuming portions of this process.
I have only run into one scenario that I do not have a solution for. There are some cushions that have overlapping piping. In those spots i am ending up with 7-8 layers of vinyl to sew through. My machine will punch through that many layers but it wont feed on its own. Tonight i am going to try lowering the sewing machines feed dogs and advancing the material and machine by hand. Hopefully that does the trick. Thankfully i only have 3 cushions that have intersecting piping. Worst case I will hand stitch them.
If anyone has any thoughts or advice I am interested in hearing it.

Works great, I had to tinker with the tension a little to get the proper stitch. I also had to order a welting/piping foot. I also ordered a roller foot that allows the vinyl to move much smoother since I don't have a walking foot on my machine, but I don't have trouble seeing through 6-7 layers of vinyl.

jarodag- Go for it! Its not that hard, just time consuming. I couldn't sew anything other than a straight line before I started this project.
mabbore- Looks good. I was going to replace my foam but after recovering my seats, I noticed that it was the old vinyl that was hard as plastic. The new vinyl makes the cushions much softer. Also, you can try steaming your foam to bring them back some.
4nryde- I hand spun the machine through the couple parts that it couldnt get through. I think there was one or two sports where I had to hand sew with a needle and pliers.
I got 2 of the 3 bow back pieces done. They have some wrinkles that I couldn't get out without taking everything back apart, but Im happy with them. They don't stand out as much in person as they do in the pic.

I am redoing my captains seat (which was some 3rd party piece of crap anyway) and eventually the back seats into a bench. So far I just have the skins, need to make some new bottoms and get some more supportive foam. I want to sit like a king when i drive.

How many layers of vinyl do you have where the piping intersects? What was your strategy for sewing those areas?

A shit ton! Lol I think in the areas where I have the French seam and piping its 6 layers of vinyl. I basically slowly feed it by hand for that inch or two where it is incredibly thick. I have my tension maxed out, running a 10-18 needle and go very slow. It's not nearly as nice as having a machine with a legit walking foot, but I am very satisfied with the results
