03 Launch SSV - Rusted out oil pan help

I was on the lake last weekend for a family camping trip and notice a small bit of oil in the bilge. I could find where it was coming from so I just watched my oil pressure and checked oil levels frequently. After the 3rd day on the water it became apparent the oil was leaking from the around the oil plug in the pan. Upon further investigation there is quite a bit of rust on/around the plug on the oil pan. Needless to say we were off the water.

2 questions knowing that the pan needs replaced.

1. How hard is it to pull the engine? 5.7L Assault. Looks straight forward but I’m concerned with realignment when putting it back in.

2. If I decide to have a shop do it... Does anyone have any recommendations for repair shops in Portland, OR?
