I am going to upgrade the ballast in my 21v by replacing the center sack with the 1180 lb gravity games sack and the two rears with either 550 lb sacks or 750s. My question is will I need to ugrade my prop for the boat to plain out?

I use ACME #1235 14.50x14.25---0.105 cup--4 blade--1 1/8"--LH

That's not a huge amount of ballast, therefore, the ACME #1235 should be a little more than he needs, unless he's at a high altitude.
The ACME #1433 is probably a better fit.
More directly to your question, yes, you'll be very happy if you upgrade, it will make a huge difference!
I am in Michigan. What are the drawbacks of having too much prop? And I meant to type 1100 gravity games sack in the center. I believe I am running the stock prop. I am not sure what they had originally

Forget the 750's and go right to the 1100's in the rear, if you want a black 750 , I have one I will swap ya for an 1100 plus give you cash

Higher rpm's maybe a change in fuel consumption. I contacted ACME and Nettle's Props for what prop they recommended for the speed and weight that I had. They both recommended ACME #1235 for me. I have no complaints. Fuel consumption is better than the stock prop (OJ--13.75x 17.5 I think) But I kept it as a back up.
