So what is the difference here? I was looking up NADA values and they had two options for the Saltare. A Saltare Open Bow and a Saltare Skier Open Bow. All options looked to be the same. Is there a difference?

I've never heard of a Saltare Skier, just Saltare and Pirata (closed bow). Probably NADA fudged it. The Saltare isn't exactly a ski boat in the TS6m/Ski Nautique/Star & Stripes/etc. sense. I could be mistaken but I believe it was marketed as a family/luxury inboard that has a good ski wake (but not a great ski wake).
Haven't heard of the two different types. Probably some non-boater entered in one incorrectly, then someone entered one correctly and never took out the old listing.
In that case, I wonder if I have a Supra Comp Skier or just a regular Supra Comp...
